Jaggery Chocolate Chip Cookies

Crispy on the edges and chewy in the center with a deep rich malt-butterscotch flavor from the jaggery, these cookies are a sure hit!

Preparation time 45 mins

Makes 12 cookies

Ingredients

1 stick unsalted butter

1 3/4 cup flour

1 cup jaggery

1/2 cup granulated sugar

1 1/2 cup bitter-sweet chocolate chips

2 eggs

3/4 tsp baking soda

4 tbsp milk powder (optional)

1 tbsp vanilla

1 tsp kosher salt and more to garnish

Method

1. Preheat the over to 350F.

2. Melt butter in a sauce pan over medium heat and let it reach a light brown color. Let it cool

3. Mix the flour, baking soda and milk powder together in a bowl.

4. In a separate mixing bowl add the browned butter, granulated sugar, jaggery, eggs and vanilla. Whisk until it becomes a cohesive batter. About 2-3 minutes.

5. Add the dry ingredients to the batter and mix until almost fully combined. Take care not to over mix.

6. Add the chocolate chips and stir them in.

7. Scoop out 3 oz dough on to a baking sheet a few inches apart and sprinkle salt on top.

8. Bake for 15 mins and let them cool on a wire rack. Enjoy!
